This olive oil of a superior category is solely conceived by mechanical processes exclusively obtained from the olives of Monte dos Frades, which varieties are Cobranosa, Galena and Cordovil. This olive oil is produced in the same day in which the olives are picked to ensure the maintenance of respective fruity aromas and low acidity which characterizes it. The Olive Oil of the Frades is certified by the Superior Institute of Agronomy, Laboratory of technical studies/Lisbon Technical University, its Analysis Report being in accordance with the requirements foreseen in the diploma CEE nr.1989/2003 establishes the necessary olive oils characteristics under the specific category of 'Extra virgin olive oil'. 2. Bottles and Technical Notes As regards the 500ml bottle the values for analysis are the following: - Sensitive Analysis Extra virgin olive oil - Acidity (% of oleic acid) 0.2 - Peroxide (meq O2/kg) 8 - Waxes: < 2.50 - K232 < 2.AK < 0.01 - Estigmastadieno (mg/kg) < 0.10 This extra virgin oil is a mono variety of "Cobranosa".
