Herring has other name is sardine or big eyes herring and caught in the sea of Southern Mid Vietnam or Mid-Mid Vietnam. Big quantity places are Phan Thiet and Vung Tau, next are Nha Trang, Tuy Hoa, Quy Nhon and Quang Ngai Birth season and beginning catching are after Lunar Holidays each year. Herring has growth rapidly. Within ****5 days, baby herring can grow up from **5cms to **9cms; especially in Vung Tau Sea herring has fastest growth up to ***1cms, ****3cms or ****5cms. Herring quantity in Vietnam is not much more than anchovy quantity. Catching situation in some years ago showed this material quantity is not enough to supply to factories. At present, in catching has some problems about catching technology and increase material makes the maintenance of the cold warehouse become worse. Day-time catching herring has better quality than night-time catching herring, which makes herring fish has broken head and stomach except a few silver herrings. At frozen factories, herring size ***1, ****3 and ****5cms has to choice to use for processing canned herring, which has spice sauce. This product was exported to EU, Northern America and some other quantity is consumed at local market. This canned herring requires fresh material, fresh blood, clear eyes and natural smell. Canned herring processing requires to can hygienically, so the price is high. In Vietnam factories, herring that has two best choice sizes are ****3cms, ****5cms, shipped to Japan. Herring fish was filleted, cleaned stomach, spice seasoned that mostly sesame under butterfly seasoned herring. Vung Tau is the main place of processing Herring, which is shipped to Korea. Herring was processed all factories in Mid Vietnam, where from Quang Ngai to Vung Tau . This material also caught in Nghe An Sea but in a short time about 2 or 3 months in a year with small quantity.
