Several types of olives are grown on the Aqallal estates including Arbequina and Arbossana varieties, Picholine Marocaine, Koroneiki and Picholine du Languedoc, as well as varieties such as Dahbia, Menara, Haouzia and Gordal. With a focus of keeping quality standards high, the oil of every variety produced is stored in stainless steel containers. The oil is not handled or filtered in any way; it is only left to settle and is decanted periodically.
