Yacon (Smallanthus Sonchifolius) is a perennial plant, traditionally found growing in the Andes Mountains in South America but is now grown in different parts of the world. It is known for its sweet-tasting roots. These edible roots contain water and fructooligosaccharides, an indigestible polysaccharide made up of fructose.

Fructooligosaccharides taste sweet, but pass the human digestive tract unmetabolized and therefore have a very low caloric effect. Fructooligosaccharides have a prebiotic effect, meaning that they are used by "friendly" bacteria that favor colon health and digestion.

Yacon root has a high fiber content which reduces appetite for an extended period and thus decreases caloric intake. The properties of Yacon root help regulate insulin levels, which promote healthy weight-loss and reduce cravings for sugar.
