Alpha amylase and Glucoamylase are starch degrading enzymes. They act in breaking down various types of starch such as corn, potato, wheat, shorghum, etc. These enzymes are very widely used in grain processing to produce ethanol. They are also used in processing of corn to produce dextrose and high fructose corn syrup. Baking is another application where these enzymes play a very important role as an additive. They are also used to treat molasses in order to convert the unfermentable sugars to fermentable ones thereby increasing ethanol yield.
