It is one of the most favorite pulses of Mediterranean, Indian and Middle East cuisines.  It is also basic ingredient of some traditional recipes like hummus and couscous.  It is frequently encountered in Spanish stews.  It is used together with or supplementary to white beans or n some recipes like Italians’ famous Minestrone.   It has found significant place in Mexican cuisine.  In general, it is used in its dried form, however, in some recipes, it is used in its fresh form.  Dried chickpea is boiled after saturating in the water.  Recently, there are  ready-made conserves marketed.
