GardeniaBlue is a blue pigment obtained by enzymetreating on geniposide contained in gardenia fruits,and getgenipin,thenproduced by complexing with a primary amino group. It is soluble in water and relatively stable to heat and lightunder the neutral and alkaline conditions

1)Dark blue powder,soluble in water,Insoluble in petroleum ether and other organic solvents

2)Good resisitance to light and heat under the neutral and alkaline conditions, stable under the PH**8

3)Oxidants and reducing agents have no adverse effect on pigments

4)Good staining for proteins
