The dried root or rhizome of the ginger plant is used to make ginger powder (Zingiber officinale). Ivory to golden flesh with a spicy and slightly sweet flavour is found in the root.

In the ninth century, Jamaican traders brought ginger to Western Europe, where it quickly became as common as salt and pepper. Ginger roots that have been peeled and sliced, then boiled in a strong sugar syrup are known as "stem ginger" in the United Kingdom today.
