Green lentils have a green seed coat and a yellow cotyledon. As green lentils age, their seed coat oxidizes to a yellowish tan colour. Weathering during harvest can also oxidize the seed coat colour. Lentils (Lens culinaris L.) were first grown in southwest Asia about 7,**0BC in the area that is now southern Turkey and northern Syria. The plant is best adapted to the cooler temperate zones of the world, or the winter season in Mediterranean climates. The lentils are quick to cook and are part of a stable diet in many countries including India and the Middle East.
The lentil plants are typically
short, compared to cereal crops, ranging from *0 to *5cm in
height depending on variety and growing conditions. Flower stalks
produce one to three flowers which develop pods which are less than
2.5cm in length and contain one or two seeds. These seeds are
lens shaped and vary in colour and size dependent on type and
variety.
