Chia (Salvia hispanica) is a flowering plant in the mint family that is native to Bolivia, Paraguay, Argentine, Mexico where it was a staple crop along with corn, beans and Sesame Seeds.  It was cultivated by the Aztecs and whole chia seeds are still used in Paraguay, Bolivia, Argentina, Mexico and Guatemala for nutritious drinks and as a food source.  The Mexican state of Chiapas received its name from the Nahuatl meaning for chia water or chia river

Chia seeds are tiny oval shaped seeds and come in white, gray and black colors. The chia offered by Abunda S.A is black and white in color, indicating a high of anti-oxidants.

Rich in omega*3 fatty acids like α-linolenic acid (ALA), chia seeds absorb up to *2 times their weight in liquid when soaked and develop a mucilaginous gel-like coating that gives chia-based beverages a distinctive texture.

A 1 ounce (2 tablespoons or *8 grams) serving of chia seeds contains:

Fiber: *1 grams.
Protein: 4 grams.
Fat: 9 grams (5 of which are Omega*3s).
Calcium: *8% of the RDA.
Manganese: *0% of the RDA.
Magnesium: *0% of the RDA.
Phosphorus: *7% of the RDA.

Chia also contains a good amount of Zinc, Vitamin B3 (Niacin), Potassium, Vitamin B1 (Thiamine) and Vitamin B2.
