SSL **5 is made of Sodium Stearoyl Lactylate, with good water solubility, while SSL **6 is made with sodium stearoyl lactylate and mono-diglyceride.

SSL is widely used in flour-based products as an emulsifier or dough strengthener. It offers excellent moisturization, crumb softening, anti-staling and shelf-life extension to dough products.  SSL can be used for bread, steam buns, noodles, and dumplings.
