Description: Tyrosol [*-(*-hydroxyphenyl) ethyl-alcohol] is a liposoluble, noncarboxyl mono-phenol compound, formed during yeast fermentation from tyrosine [*-(*-hydroxyphenyl)-alanine]. In addition to its antioxidative effects, tyrosol has the neuroprotective, anti-inflammatory, antiaging, and antifungal properties. Moreover, researches have shown that tyrosol possesses the ability to modulate human LDL levels besides having cardioprotector action . Also, it is known that tyrosol inhibits lipopolysaccharide (LPS)-induced cytokine releasing from human monocytes and LPS-induced leukotriene B4 releasing in human mononuclear cells.Tyrosol exerts anti-inflammatory effects on the liver and pancreas of STZ-induced diabetic rats via its antioxidant activity, hence it may play an important role in the management of diabetes mellitus. The immunohistochemical studies confirm the anti-inflammatory effects of tyrosol.
