Apple polyphenols is a general term for
polyphenols contained in apples. Polyphenols are widely found in
fruits and vegetables. The polyphenol content of apples varies with
maturity. The polyphenol content of unripe fruits is *0 times that
of mature fruits. Therefore, it is advisable to use unripe fruit
for the extraction of apple polyphenols. Crude apple polyphenols
contain chlorogenic acid, catechin, epicatechin, apple condensed
tannin, phlorizin, phloretin, anthocyanin, etc. Among them, apple
condensed tannin accounts for about half of the total polyphenol
content.
