Our organic salts come from the Biosphere Reserve Ria Celestun located *0 kilometers from the city of Merida, in an area bordering between the states of Yucatan and Campeche. It is a site of special marine beauty expressed in its wide range of green colors. For its toponymy, Celestun horror means stone in Maya.

In ***2 the farm was established Real de Salinas salt, which meant that the place and its surrounding communities, will populate the migration of fishermen who came from other places and took up residence to exploit the salt and fishing. The villagers continued their traditional commitment to the fishery, so much so, that through scale fisheries, Celestun turned in the second largest port in the state. A level artisanal salt production has continued since then. It is a region with a vast array of biodiversity, ecosystems possessing as varied as: mangrove, coastal dune vegetation, hillocks, savannah, Tulare, reedbeds, flooded lowland forest and tropical deciduous forest with cacti. The Biosphere Reserve Ria Celestun protecting the natural habitat for feeding and reproduction of pink flamingo, which prefers the most protected areas of rivers or lagoons with shallow water, high salinity and soil slurries.

This is where playing the Artemia salina, a crustacean that is their main food and gives the pink color to their feathers. The conservation objective is a hypersaline estuary of very little depth, which facilitates water evaporation, and promotes the existence of Artemia and flamingos that eat. These marshes are formed by the accumulation and deposition of sand, because ocean currents and gives rise to the SAL of what we have achieved two products:

1. Salt Flower: Collect this plant is complicated by the crystallization process, and this occurs at the water surface at dawn during spray. Collecting it is performed solely on the wind that blows. In this way, we prevent the salt grain goes to the bottom surface and the extraction process is performed manually using the blade.

2. Rock salt: This is located at the bottom of ponds and collected manually. Due to the presence of the Artemia Salina, have also only a pink salt in the country. This salt has a natural color so that it is proper and appetizing brilliant sight. A big advantage we have over the rest of the salt, is our differentiation through the combination of salt and fresh water. This mix of our salt water gives a light flavor allowing better accompany food, as it is not **0% sea salt, but not a mineral salt.
