Processing Method
Eastern Canadian Snow Crab is butchered, cleaned, graded by size, packed in **-pound plastic tubs, cooked in boiling water, placed in a chill or cool tank, brine frozen in a brine tank, then put through a glaze tank to add a *2 – *5 % protective glaze on the product.
Sizing:                                 
1. 3 – *-ounce sections, each section weighs between 3 and 5 ounces, approximately **0 sections per **-pound case.
2. 5 - *-ounce sections, each section weighs between 5 and 8 ounces, approximately ****5 sections per **-pound case.
