Description

Product Specifications: Big rhizomes, washed, not scrapped or peeled, mature and well cured (firm with the right moisture content). The product is tick and hard, laterally compressed, often palmate branched; about 1.**2.5cm in diameter; pale yellow in color and covered with distichous scales. It must be free of pest infestation such as holes and any other trash such as roots and stems. The following are the acceptable quality parameter of split dried ginger.

             i.  Moisture content: less than *2%

             ii. Impurities:                  1%

             iii. Acidic                       1%

             vi. Ash Maximum of               1%

             v.  Alchohol Soluble less than   9% 

Uses: Ginger is in high demand for its aroma,flavour and pungency. It is culinary purposes in gingerbread, biscuits, cakes,puddings, soups and pickles. It may be use to spice curry powder, ginger beverage,ginger ale and ginger wine. It is also used as a local medicine. The list is endless.
