Natural sweeteners from leading Chinese manufacturers.

Stevioside ranges in sweetness from **0 to **0 times sweeter than sucrose. Under high concentration conditions it has a slightly bitter taste. The compound is heat-stable, pH-stable, and does not ferment. It does not participate in the Maillard reaction and retains its white color when heated. It is a perfect substitute for sugar in making low-calorie or sugar-free food for diabetes patients, weight conscious people and children (to prevent dental cavities).

It is suitbale for soft drinks, fruit juice, confectionery, baked products, condiments and ice creams and all other food that needs sugar. It is more cost-effective than using sugar for the food industry. Better effect can be achieved when used with sugar.

Rebaudioside A (hereafter RA) is the most sweet steviol glycoside found in stevia plant. It is **0 to **0 times sweeter than sucrose. RA has all the benefits of stevioside and the closest taste to sugar among all steviol glycosides.

Glycyrrhizin (or glycyrrhizic acid) is the main sweet-tasting compound found in licorice root. It is *0 to *0 times as sweet as sugar. Although sweet, the taste sensation of glycyrrhizin is different from that of sugar. The sweetness of glycyrrhizin has a slower onset than sugar has, and lingers in the mouth for some time. Unlike the artificial sweetener aspartame, glycyrrhizin maintains its sweetness under heating. Glycyrrhizic acid is commonly available as its sodium salt or ammonium salt.

Usual applications: 0.1% in soft drinks, breads, cakes, sausages and canned food; 0.*5% in shampoo or hairspray; 0.5% in toothpaste.

The content of glycyrrhizic acid in the solid form of the licorice root extract should be no less than *0% and it should be no less than 7% in the syrup form.
 

Xylitol is roughly as sweet as sucrose with *3% fewer calories. When dissovled in water xylitol absorbs heat and gives a refreshing and cool sensation in mouth. It does not participate in the Maillard reaction and does not ferment.

Xylitol is used as a sweetener in chewing gums and pastilles, or food for diabetes patients. Other applications include oral hygiene products, such as toothpaste, fluoride tablets and mouthwashes.
