To guarantee absolute high quality, Gelateria Callipo applies the rigid control systems of HACCP (Hazard Analysis and Critical Control Points), oriented to guarantee safety during all the production process.

With HACCP and its rigid preventive measures a scrupulous monitoring is carried out controlling the critical points in all production phases, and not only on the finished product, to value possible risks that may influence the security of the product.

In particular, Gelateria Callipo begins with the meticulous research of raw materials, rigorously selected and guaranteed, bought only from qualified suppliers and subjected to rigorous controls from their arrival to  the factory.

The innovative technology of the installations enables the continuous control of the whole production process and the application of a metal detector allows to detect the presence of unknown substances in the finished product.

In addition, the cold production installations are entirely controlled by computer systems, which assure the correct conservation of Ice Cream.
