These mustard seeds grow on the mustard plant in three distinct colors like black, white and brown. Although similar to brown in appearances, black mustard seeds are more prominent and possess an earthy, considerably less bitter flavor. Black seeds shed their pods when mature, unlike brown seeds, making it essential to hand pick them, which makes them challenging to achieve. The enzyme called myrosinase is what produces the pungent taste of mustard seed and is stimulated by water. Roasting these seeds in oil will retain the taste subtly and add a less pungent, but nutty flavor to items such as curry pastes.
