The tree is native to Sri Lanka (former Ceylon) and now widely grown in tropical climates. The bark contains a volatile oil. It's peeled from the branches and left to dry and ferment for *4 hours. The outer layer is then scraped off and the inner bark curls into quills as it dries. Ceylon cinnamon has a slight citrus flavor. It's pale in color and thin. Ceylon is more fragrant and not as pungent and sweet as Cassia. That is not Cassia Cinnamon. Cassia has a stronger flavor than Ceylon. We categories the cinnamon based on the thickness. H1 is the most thin type. Then H2 and H3 . These are containing more oil also. It can use to extract cinnamon oil too.
