Quality on arrival to be conform to analysis 
Nibs roasted and sterilized are transformed into liquid paste named "mass" or "cocoa liquor".  A beater blade grinder and ball mill refiners allow to reduce mass size particles

Cocoa liquor (**0%), Not alkalized

PHYSICAL AND CHEMICAL CHARACTERISTICS
1 - Free Fatty Acids (FFA)  : 2% maxi (quantity of free fatty acids on butter extracted by distination)
2 - Humidity : 1,*0%  maxi (drying in the steam room then cooled in a desiccator)
3 - Fat Content : Minimum *2%  - Maximum *4% (extraction of the butter by distination) 4 - Fineness : Minimum *9% {wet method through a *5um mesh sieve) 5 - Moisture : 2% maximum
