By alkalizing taste of cocoa acquires perfection. During this processing cocoa butter, which gives it a bitter taste, is eliminated. Acids in cocoa beans are neutralized, and their astringent properties are significantly reduced. In addition, typical flavor of cocoa powder arises, and its characteristic color gets more intensive. By varying of conditions during the alkalization, it can be achieved wide palette of colors of the cocoa powder, from light brown to red, and to dark brown colors.
